You can also chop some leeks roughly, coat them with a bit of oil, salt, and pepper, then scatter them on the potatoes. In this photo the leeks are a tad too burnt. Add them about fifteen minutes into the cooking.

One oft encountered problem when making Shepherd’s pie is getting the mashed potato layer on the top. It sometimes has to be almost smeared and makes an unsighlty terrain which looks more like something for Geography class than dinner. Using the back tines of a fork to smooth the surface over will give it a good pinstripe pattern and level the surfce well.

For the sauce, you can use cream of mushroom, or pretty much cream of anything, except Estee Lauder or Dove (yuk). A simple tomato sauce can be used as well.
